good fall recipe- apples and pork tenderloin

From About.com

Ingredients:
1 to 1 1/2 pounds pork tenderloin
2 tablespoons cornstarch
1 teaspoon ground cinnamon
2 tablespoons brown sugar, packed
2 cooking apples, peeled, cored and sliced
2 tablespoons dried cranberries or raisins
Preparation:
Preheat the oven to 400°. Place the pork tenderloin in a roasting pan or casserole dish. Combine the remaining ingredients in a bowl and stir. Spoon the apple mixture around the pork tenderloin. Cover and bake 30 minutes. Remove the lid and spoon the apple mixture over the tenderloin. Return to the oven and bake 15 to 20 minutes longer, or until pork tenderloin is browned and cooked through. A meat thermometer in the center should register at least 150° to 160°.

I doubled the apples and spices.
I would add a cup or so apple cider or juice. The apples were a little dried out but the combination was so good!!!!

Another proud parenting moment with Mason


On the way to church(!!!) Mason called Rylee an "idiot". Instead of yelling I thought I will actually try to use this as a teaching moment. I said "Do you even know what that means?" He said "Yeah, someone that isn't smart" Darren then said, "Not only do we have to worry about what he says but that he actually knows what he is saying and has a good vocabulary." YIKES!!

ER

I love to watch ER. I just watched the premier and can't believe Greg died!! I was crying for the last half of the show. I know it's the last season but why oh why did he have to die. As I was thinking about it, I was wondering how many attackers with guns have been in the ER, how many explosions, how many fires and other catastrophes have happen during the years this has been on. It is a little silly but I really enjoy watching it.

My first note home from the teacher


Yes, Mason got his first note home today because he got his card changed from green to yellow. He has wanted it changed from the first day of school...I will write more later....

So let me tell you what happened...

Mason's teacher gave him a warning for doing something silly during carpet time. She said if you don't stop you will have to change your card then he said he wanted his card changed. So she changed it and then he had to sit out of recess and gym. Today before school he informed me he could go straight from a green card (skipping yellow) to red. I said you better not. He said then if I do I will get three spankings and the last one will be on my bare buns and hurt. I said yah. (hey whatever he thinks will be bad is what will happen right (i make it up as i go)). I am nervous to pick him up today!! Hopefully he learned his lesson!!!!!!!!

3 kids, 4 sicknesses all in one week

So cute but so many germs...


Well now that school is in session the germ swapping has begun. Ayden started this last week with pink eye. I noticed it Sunday night and started the drops right away. Luckily no ones else got that (YET??!). Then Wednesday Mason's teacher said he was kinda quiet all day. That's just not right! We got home and he had 101 degree temperature. Then that same night Rylee came home from Awana with a temp. Now today Ayden had a temperature. It's only the beginning of sick season I am afraid!!

Parkside Pre-K

Dear Campus Community,

I am pleased to announce that the University of Wisconsin-Parkside's Child Care Center and Preschool has been selected to be part of the effort to assure that every child in Kenosha has public (free)access to prekindergarten experiences. We will work in conjunction with the Kenosha Unified School District to serve as many students as possible. This effort has started late in the semester due to the KUSD timeline for implementation. The Preschool 4 Program will be from 8:20 – 11:30 Monday –Thursday. Additional care is available on an hourly paid basis as space permits. At this time we have space to accept new preschoolers who are age 4. We are targeting children who might not be enrolled in a program at this time.

If you know of a child that is not being served or a family who is interested, please have them contact the Center at 595-2227 or 595-2033. Space is limited.

Fun things to do in Kenosha

Well actually Racine. If you have not been to the Racine Children's Theater, it is definitely worth checking out. We have gotten season tickets (4 shows) since Rylee was 3. It is perfect for getting your kids into the theater and the price is great too. We usually go on Sunday afternoons and make it our family day activity.

Recipe...Honey Roasted Chex mix

Since I have cereal coming out of everywhere...(couponing). I decided to make a snack with it. Mason loved...Rylee didn't because it had cheerios???

HONEY ROASTED CHEX MIX

3 cups Honey Nut Chex cereal
2 cups Cheerios cereal
1 1/2 cups Bugles original flavor snacks
1 cup pretzels or 1/2 cup honey-roasted peanuts
2 tablespoons light corn syrup
2 tablespoons honey
1 tablespoon margarine or butter*
1/2 teaspoon vanilla

Heat oven to 325 degrees F.

Mix cereals, snacks and pretzels in large bowl; set aside.

Heat corn syrup, honey and margarine to boiling in 1-quart saucepan over medium heat, stirring occasionally. Remove from heat; stir in vanilla. Pour over cereal mixture in bowl, stirring until evenly coated. Spread in ungreased 15 1/2-inch** baking pan with sides.

Bake 20 minutes, stirring after 10 minutes.

Spread on waxed paper or aluminum foil; cool completely. Break into bite-size pieces. Store in airtight container.

*Do not use spread or tub products.

**A rectangular pan, 13x9x2 inches, can be used instead. Bake 24 minutes, stirring after 12 minutes.

Makes 7 1/2 cups, 1/2 cup per serving

Movie Review -Fool's Gold


I would definitely give this movie a 1/2 of a flat diet coke out of 5. I couldn't finish watching it because I really didn't care about either of the characters (Kate Hudson and Matthew McCanaugh(sp)). The highlight though was Matthew with his shirt off...that accounts for the 1/2 star, but it actually deserves a lot more.

My trip to the ER

Friday I went to the ER after a bite/sting on my face that lead to my arm feeling numb and tingling. I called the doctor and they said to go to the emergency room. I said, "can I take a benedryl or something?" Anyway after about 2 hours at the ER they said "take a claritin" TOO Funny!! I don't know how much it is gonna cost but my arm is fine.. just the bite or sting site is really itchy...should probably take another claritin!

Virtuous woman review

A Virtuous Woman (Oprah's Book Club) A Virtuous Woman by Kaye Gibbons

This was a fast easy read about an interesting marriage. This is definitely not a christian book especially since the main characters seem to be atheist. Looking past that it was interesting to read how two very different people can make a marriage work.

First day of school


I am sitting here in a quiet house.....

We dropped Mason off at kindergarten and Rylee off at 3rd grade. I can't believe it!! I am anxious to pick them up to see how it was.


UPDATE>>>>

Well, it was a successful day for both Rylee and Mason. One of Mason's comments was "they made me lay down on a carpet"...in a very disguised way...like how dare they. Mason and Rylee fell asleep very early last night.

Grilled peaches-oh so good!

Darren decided he wanted to grill peaches. We put them on skewers and I put a dash of honey and sprinkled some brown sugar on them. They were so good over Double Churned Breyers light vanilla ice cream and a little Caramel syrup. Yesterday we were gonna have them again but Darren ran out of propane so I sauted them after soaking them in some water and a dash of honey and brown sugar. Just had to share my little indulgence.
